I don't mean to rant. It's just that Texas barbecue is not in the same league with Kansas City barbecue.

For the record, while there is a Kansas City, Kansas ... the real Kansas City in Missouri. That's where you find the Kansas City Chiefs, The Kansas City Royals, the Negro Leagues Museum, the National World War I Museum, The National Jazz Museum, The Plaza, etc. Kansas City, Kansas, has a shopping center and a racetrack.

I don't mean to hurt your feelings. I'll be the first to admit that the Mexican food in Texas is light years ahead of Kansas City. I would not tell someone to come to Kansas City for Tex-Mex. I would not send someone to Wisconsin for a Cheesesteak. And I would not send someone to Texas for barbecue.

It's not that you can't get good barbecue in Texas or a good Cheesesteak in Wisconsin, for that matter. I just wouldn't expect someone to settle for second best.

And it's not so much that Rudy's doesn't compare to the finest K.C. has to offer, it's that it doesn't compare to what you would get walking around the parking lot at Arrowhead on a Chiefs gameday. Any yahoo with a smoker in Kansas City could top it.

I figured Rudy's was a good representation of Texas barbecue since the Austin Chronicle ranked it as the third best barbecue joint in town. Perhaps I was wrong and Rudy's is actually near the bottom of the list. If that's the case I'll be open to suggestions of the better barbecue establishments.

The World Series of Barbecue, the American Royal, opens this weekend in Kansas City and EVERY barbecue team worth their salt (or sauce, as the case may be) is there every year. I'll look for anyone you recommend.

Steven, when we were all standing outside of the event, you may recall a certain Tabula Rasa mission designer saying you guys needed to check out Salt Lick. I only wish you also that had to help with your comparisons.

We need to uhh...do more research. My tummy is grumbling.

See he wouldn't like that either though. These KC people think BBQ is supposed to be sweet with some crazy kind of maple-syrup sauce. They basically eat pancakes and call them "BBQ". Here in Texas, we have "spice" in our BBQ as God intended it! If we had had a kegger I would have fired up my smoker and learnt ya somethin ;).

PS - Yes, sorry about the KC/Kansas thing. I always do that without thinking. And by "always", I mean whenever I'm talking about places whose BBQ almost compares to ours.

Actually, that's the problem.

You don't have enough spice in your barbecue. Texans seem to think that you can just slow cook some beef make it as hot as possible and call it barbecue.

In Kansas City, we have higher standards. The meat has to be cooked so long that not only is it melt-in-your-mouth tender but you can also taste the smoke. If you aren't going to be able to taste the smoke, you might as well use a crockpot.

And the spice can't be just hot spice. I like a spicy sauce. But if ALL I wanted in sauce was for it to be hot, I'd douse my meat in Tobasco and call it a day. Good barbecue is both spicy and sweet. It takes patience and knowhow to make a sauce in which both the sweet and the spicy come through.

You can also make other parts of the meal spicy. Try something other than salt and pepper on the meat before you throw it in your crockpot. Give the meat a little flavor. Put a little spice in your cole slaw rather than serving cabbage and vinegar.

I used to work for a company with locations in Louisiana. I once had a Cajun come to visit our plant in Kansas City. If you know anything about Cajuns, you know that they do everything spicy. I took him out for barbecue and by the time he was done he had sweat running down his face, and was still talking about "sweet" the sauce is.

Don't take it too hard. You all will figure out how to barbecue properly sooner or later. Much like the act of barbecuing itself, you just can't rush these things.

I dont understand why all the comotion about the taste of BBQ.....Ive had Texas BBQ and Ive had Kansas BBQ , Texans have good BBQ as well as all ya'll Kansas ppls ... but I just gotta let you all know theres no BBQ like a BBQ from Louisiana not only does our BBQ taste good but we put alot of love and time into our cooking and a good BBQ isnt a good BBQ without all the fixings and trimmings , I dont care how good your meat taste or how tender it is , if you dont have some good food to through up on your plate to eat with it , it will be catorgorized as a disasteress shyty meal (cajuns make up their own words too. ;) and we dont wont no part of it .....here in lousiana ppl use smokers .. but most of us just use a old home made large metal barrel cut in half where the coals lay low from the rack of meat , it has the taste of a "grilled flavor with spices and sweetness" and is extremely juicy and tender .....smokers are good when u want smoked meat but when u want a down south BBQ our remedy is the way to go ..as well as tons n tons of trimmings/sides/fixings added with some good music a few drinks and a down home southern good time full of friends and family socializing and 2 stepping it through the yard has any state beat when it comes to a "BBQ"

If the Texas Social Club is there ask for Bill Felder and tell him you need to experience barbeque. They've been competing and winning events like the Jack Daniels cook-off and the World Championship of BBQ (actually held in Houston, not KC) for around 20 years. I'm not sure if they still make the trip to KC, but good chance.

That, at the end of the day, is why Kansas City barbecue is better. Over the years, we have engaged in the systematic destruction of anyone who does not like barbecue. The result has been entire city focused on one, single thing -- producing the best barbecue America has ever known.

For the record : North Dakota rice krispy bars are for sissies!! You want a REAL RKB, you come to Minnesota. Tabasco sauce is NOT hot. Get yourself some habanero. As for BBQ.... the true test is to whether or not you can scrape the meat off the highway, smoke it, and still make it edible. This means the real home of BBQ lies in Arkansas....

Well, I was going to do a poll on who had the best BBQ (and add in one of my favorites, Memphis BBQ), but it kicked Roo's new "Where do you live?" poll off the front page, so I guess we'll have to wait.

I have to say, though, that I prefer my sauce to the sweet/spicy side rather than TX style (ditto with chili). I like to be able to continue to taste my food past the first bite.

Now... for cream of crab soup or crab cakes, I vote for Jerry's Seafood in Laurel, MD. Get the Crab Bomb. And the soup... omg.
